A whole grain is the entire seed of a plant. This seed or kernel is composed of endosperm, germ and bran. Their milling process was designed to retain the integrity of these three parts and impart the nutrition of the whole grain—allowing the natural nutrients, fibers, oils and flavors to speak for themselves.
Furthermore, taste tests by the French Culinary Institute find its flavor qualities on par with heritage wheat varieties. This flour is milled to a fine consistency, with medium-sized bran flakes left intact.
